Makes: 4 Waffles
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1¾ cup milk
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • Special Equipment: Waffle Iron
  1. Heat the waffle iron according to the manufacturer's directions.
  2. Whisk the eggs till it is light and fluffy using a stand in mixer or a hand beater.Add in the remaining ingredients and continue to whisk them till they are combined.
  3. Lightly coat the waffle iron with cooking spray. Using a ladle, pour the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close the iron and cook until the waffle is golden brown on both sides.
  4. Serve immediately with maple syrup or whipped cream or a topping of your choice.
