  • 1 cup all purpose flour maida
  • 1 1/2 cups thick yogurt
  • 2 tablespoons bengal gram flour besan
  • a pinch of hing or asafoetida
  • 1 teaspoon ginger grated
  • 1/4 finely chopped cilantro / coriander leaves for garnishing finely chopped
  • 1 sprig of curry leaves or kadipatta finely chopped
  • 2 Indian or Thai green chilies (Bird's eye) finely chopped
  • 1 tablespoon sugar
  • ΒΌ teaspoon Baking Soda

Special equipment


  • Mix all the ingredients to form a batter of thick consistency.
  • Grease all the moulds of the appe pan with oil and heat it on medium heat. Reduce the heat to low and add a spoonful of batter to each of the moulds till the moulds are 3/4th full. Let the Goli bajes cook on low heat for 6-8 minutes and then turn them over and cook an additional 3-4 minutes. Set the bajes aside. Repeat the process till you run out batter.
  • Serve the goli bajes hot with chutney
