  • 1 cup brown rice or oorpel ari
  • 2 1/2 cups of water
  • salt to taste
  • Accompaniments - ghee pickle, fish chutney etc.


  • Wash and drain rice.
  • Pressure cook the rice with water on medium heat and salt till the vent goes off twice. Lower the heat to a simmer and continue to cook for another 5 minutes. Take the cooker off heat and let it cool down before opening the lid.
  • Serve the Ganji hot with the desired accompaniments.
