Ganji is a simple rice porridge from Mangalore that is best had with pickle and a side of fish chutney. It is comfort food at its best!

- 1 cup brown rice or oorpel ari
- 2 .5 cups water
- salt to taste
- Accompaniments - ghee pickle, fish chutney etc.
Wash and drain rice.
Pressure cook the rice with water on medium heat and salt till the vent goes off twice.
Lower the heat to a simmer and continue to cook for another 5 minutes.
Take the cooker off the heat and let it cool down before opening the lid.
Serve the Ganji hot with the desired accompaniments.
