Heat coconut oil in a kadhai or wok over medium heat. Add mustard seeds and when they begin to pop, add urad dal, roasted peanuts, curry leaves, and asafoetida. Fry them for a few seconds and then add rice, lemon juice, salt, turmeric powder, and chili powder. Gently mix them together until all the ingredients are well combined. Take it off heat.
