These air fryer roasted baby potatoes are flavorful, delicious, and easy to make. Seasoned to perfection, these Bombay potatoes makes for a perfect side dish with any meal.
Wash the baby potatoes thoroughly. Chop them into half (no need to peel). If using regular potatoes, dice into 1-inch cubes.
Add the oil, salt, chili powder, coriander powder, cumin powder, dry mango powder and carom seeds (if using) to a large bowl. Mix well to combine.
Add the halved baby potatoes and toss in the oil and seasonings until completely coated.
Place in the air frying basket - don't overcrowd. Depending on the capacity of your air-fryer, you may need two or more batches.
Air fry for 10 minutes at 400°F. Stir the potatoes to ensure even cooking. If using a basket-style air fryer, shake the basket to toss the potatoes.
Cook for an additional 8-10 minutes until the potatoes turn golden brown and crisp on the edges. The potatoes are done with they can be easily pierced by a fork.
Serve hot with ketchup, or any dip of your choice.
