This authentic Tandoori chicken tikka recipe is a delightful appetizer with a slightly charred exterior and a succulent interior. Make it over stovetop or an air fryer - 30 minutes is all you need!
Combine all the ingredients under the marinade section in a mixing bowl.
Add the chicken pieces to the marinade and coat them one at a time so that each piece is evenly marinated.
Let the chicken sit in the marinade for about 30 minutes.
Stovetop - pan frying
Add a tablespoon of oil in a pan kept over high heat on a stovetop.
When the oil heats up, carefully place the chicken in the pan. Don't overcrowd the pan. Note: If using mustard oil, let the oil smoke first.
Cook for a minute on each side and then reduce the heat to medium-high.
Let it cook on each side for about 6-8 minutes. Set it aside.
Add more oil if needed for the next batch and repeat the process of cooking each side for 6-8 minutes.
Cooking using air fryer
Coat the air frying basket with oil before placing in the air fryer
Place the chicken pieces on the air frying basket in a single layer making sure not to overcrowd them - you’ll have to do it in two batches.
Set the temperature to 400°F (200°C ) and allow the chicken pieces to cook for 8 minutes.
Flip the chicken pieces. Cook for another 8 minutes.
Transfer the chicken to a plate and repeat the process with the next batch of chicken.
Garnish with finely chopped cilantro and serve immediately with a side of lemon wedges, sprinkled with chaat masala.

Tips/notes for perfect murgh tikka
Choice of oil: Opt for oils with a high smoke point. I personally prefer mustard or avocado oil for their flavor and heat tolerance.
Chicken selection: Boneless, skinless chicken thighs are my go-to for this recipe. They yield a moist and succulent result. However, boneless chicken breasts are also a great option if you prefer.
Grilling on skewers: Feel free to thread the marinated chicken onto skewers for grilling. If using wooden skewers, soak them in water for 10-20 minutes to prevent burning during cooking.
Adding vegetables: Incorporate veggies like diced onions and bell peppers in various colors for added flavor and visual appeal. Add them to the marinade just a few minutes before grilling.
Chop chicken pieces equally: Ensure the chicken thighs are chopped into equally sized pieces. This promotes even cooking and ensures every piece is perfectly done.
Smoked paprika for flavor: Adding smoked paprika can mimic the taste of tandoor-cooked food. It's optional, so skip it if it's not available.
Repurposing leftovers: Have leftover chicken tikka? Transform them into a delicious chicken tikka masala by simmering them in a tikka masala sauce for about 5-10 minutes.
Checking chicken temperature: To ensure your chicken is cooked perfectly, check the internal temperature. It should reach 165°F (75°C) for safe consumption.
