I am always looking for a dessert that is a little bit healthy and just a little bit indulgent. These chocolate-dipped strawberries are the best of both worlds. Made with fresh juicy strawberries and a rich chocolate coating you can feel good about sharing these with the loved ones in your life.

It’s hard to believe there was, not too long ago, a time when strawberries had not been introduced to their sleek chocolate coating. In the 1960s at a small gourmet shop called Stop ‘n Shop Lorraine Lorusso invented the chocolate-dipped strawberry and they were an instant success.

How to Make Chocolate Dipped Strawberries

Ingredients

  • Strawberries – I used 1 lb. of fresh strawberries. Frozen will not work in this recipe as they tend to be mushy when they come to room temperature.
  • Chocolate – Semi-sweet chocolate chips or dark chocolate chip morsels work wonderfully.

Step by Step Instructions

  1. Rinse strawberries and pat dry. For best results, allow the berries to air dry for about an hour.
  2. Heat 1 cup of chocolate chips in a microwave-safe bowl for 15 seconds. Remove from the microwave and stir well.
  3. Heat the bowl in 15-second increments and mix well in between until the chocolate is completely melted.
  4. Add the remaining 1/2 cup of chocolate chips to the melted chocolate and stir vigorously until the chocolate chips dissolve completely. This step is important to get a smooth and silky texture.
  5. If the chips do not melt completely, heat the bowl in the microwave for 5-10 seconds. Mix again. The melted chocolate should be shiny and smooth.
  6. Transfer the chocolate sauce into a juice glass or a trifle bowls. This helps make it easier to dip the strawberries into the chocolate.
  7. Using the leaves of the strawberries, dip them completely in the chocolate sauce. Set them on the parchment paper to dry.
  8. Sprinkle with toppings (if using) before the chocolate sets. Repeat the process with the remaining strawberries.
  9. Allow the strawberries to set for about 15-20 minutes to set. For best taste, eat the berries immediately. Leftovers can be stores in the refrigerator for about a day.

  1. Use the freshest strawberries for the best results.
  2. Make sure to completely dry the strawberries, or else the chocolate will seize or harden up.
  3. The strawberries preferably should be at room temperature so that it doesn’t bring down the temperature of the chocolate dipping sauce causing it to solidify.
  4. Work quickly once the chocolate has melted or else it will harden up. To melt it again microwave it for about 5-10 seconds. Mix well. Repeat if needed.
  5. If the chocolate seizes up add a teaspoon of oil to the chocolate (I prefer avocado oil). Microwave for about 5-10 seconds. Mix vigorously. Repeat this process of heating until the chocolate liquifies.
  6. Follow the instructions in the recipe to temper the chocolate – this will give the chocolate-dipped strawberries a smooth and silky finish.
  7. Do not freeze the leftovers but you can refrigerate them for about 24-36 hours. Any longer than that strawberries will show condensation making it a bit unsightly.

Ingredient substitutions

The best kind of dipping chocolate to use for this recipe would be Couverture chocolate. Also, called callets this kind of chocolate chips has a high percentage of cocoa butter (>33%) which gives a smooth finish and a snappy texture. These are typically more expensive than the ones commonly found in the grocery stores (which is what I use).

Garnishes

  1. Melt white chocolate chips in the microwave. Once completely melted, dip a butter knife and use it to drizzle the sauce over the strawberries.
  2. Depending on when you are making the strawberries, sprinkle with seasonal sprinkles.
  3. Used crushed peanuts or pecans to top the berries.
  4. You can also dip the chocolate covered strawberries into mini chocolate chips.
  5. Top with coconut flakes.
  6. Crushed Oreos also make a wonderful topping for these berries.

How to prep ahead

The most time consuming part of making these chocolate dipped strawberries is allowing the strawberry to dry. I would suggest washing and drying your berries in the morning before you make them to allow them ample time to dry and come to room temperature.

How to store

Refrigerate the leftovers. Consume within 24-36 hours.

Troubleshooting tips

What to do when chocolate seizes?

If the chocolate seizes up add a teaspoon of oil to the chocolate (I prefer avocado oil). Microwave for about 5-10 seconds. Mix vigorously. Repeat this process until the chocolate liquifies.

Should strawberries be cold?

No, I would suggest allowing the strawberries to come to room temperature before coating in the melted chocolate.

Will chocolate covered strawberries keep overnight?

Yes, any leftover chocolate dipped strawberries can be kept in the refrigerator over night and up to 36 hours. However, the best strawberries are when they are freshly dipped.

What kind of strawberries should you use?

The best strawberries are fresh and ideally red all the way to the top with no bruising or mold. I would not recommend using frozen strawberries as they will melt and get mushy.

  • Add 1 cup of chocolate chips to a microwave-safe bowl and heat in a microwave for 15 seconds. Remove the bowl from the microwave and stir well.
  • Continue to heat the bowl in 15-second increments and mix well, till the chocolate is completely melted.
  • Add the remaining 1/2 cup of chocolate chips to the sauce and stir vigorously till the chips dissolve completely. This step is to important to get a smooth and silky texture.
  • If the chips do not completely melt, put the bowl back in the microwave for 5-10 seconds. Mix again. The end result should be shiny and smooth.
  • Transfer the chocolate sauce into a juice glass or a trifle bowl. This will make it easier to dip the strawberries.
  • Using the leaves of the strawberries, dip them completely in chocolate sauce and then set them on the parchment paper to dry.
  • Sprinkle the toppings (if using) immediately before the chocolate sets in. Repeat the process with the remaining strawberries.
  • Let the strawberries sit for about 15-20 minutes to allow them to set. For best taste, consume them immediately. Can be stored in the refrigerator for about a day.
