Date cake made from luscious dates is probably one of the moist cakes you have ever eaten! Best part – you can whip it up in a blender in no time.
If I could do cartwheels, I would. Really.
I don’t bake a lot of cakes so when I make one, and it turns out to be so perfect that my kids demand that I make it for their birthday, I do go crazy.
Date cake has been by far the best cake that we have ever eaten that tasted soo good even though it was not loaded with any frosting.
What’s not to love about a cake that’s made from luscious dates and is moist, soft and so easy to make that you can whip it up in a blender!
It was so good that I am going to let the recipe do all the talking.. and also maybe because I have stuffed my mouth with the last piece of this cake.
I fell in love with this cake the minute I popped it out of the oven. It was perfect! The Date cake had baked beautifully, and it had no cracks – all I did was dust it with some confectioners sugar, and that’s it.
…and it was ready to eat!

How to make date cake at home?

Date Cake Recipe
Ingredients
- 1 ½ cups seedless dates chopped
- 1 ½ cups water
- 1 teaspoon baking soda
- ½ cup unsalted butter (1 stick) kept at room temperature
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- ¼ teaspoon salt
- 2 teaspoon baking powder
- Powdered sugar to dust the cake
Instructions
WITHOUT using a Blendtec Blender
- Preheat the oven to 350°F. Grease a 9-inch square pan with cooking spray or butter.
- Boil water in a saucepan and add the chopped dates to it and let it cook for 5 minutes. Add baking soda, mix well and switch off the heat. Set aside for 15 minutes and grind the mixture to a fine paste.
- In a mixing bowl of a stand-in mixer, cream the butter, and sugar on medium speed till they are light and fluffy. Add eggs and vanilla to the mixer and continue to beat them till they are combined. Add both flours, salt, pureed date mixture, and baking powder and mix them in till they are well combined.
- Pour the batter into the greased pan and bake for 35-40 minutes until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the cake cool in the pan before dusting it with powdered sugar
Instructions using a Blendtec Blender
- Preheat the oven to 350°F. Grease a 9-inch square pan with cooking spray or butter.
- Boil water in a saucepan and add the chopped dates to it and let it cook for 5 minutes. Add baking soda, mix well and switch off the heat. Set aside for 15 minutes.
- Add eggs, butter, vanilla extract and sugar to the blender jar and secure the lid. Select "Batters" and run the cycle twice or blend on a Medium to Medium-Low speed for 60 seconds.
- Add the date-water mixture and select "Smoothie" or blend on a Medium to Medium-Low speed for 60 seconds
- Add the remaining ingredients - both flours, baking powder and salt in the blender and secure lid. Press "Pulse" 3–5 times or until dry ingredients are combined with the wet.
- Pour the batter into the greased pan and bake for 35-40 minutes until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the cake cool in the pan before dusting it with powdered sugar.
Instructions using Instant Pot
- Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil. Add chopped dates to it and let it cook for 5 minutes.
- Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes. Grind the dates (along with the water it was boiled in) to a fine paste.
- In a mixing bowl of a stand-in mixer, cream the butter and sugar on medium speed till they are light and fluffy.
- Add eggs and vanilla to the mixer and continue to beat them till they are combined. Add both flours, salt, pureed date mixture, and baking powder and mix them in till they are well combined.
- Grease a 6-inch bundt cake pan and pour the batter into the greased pan. Cover it with foil.
- Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet.
- Place the bundt pan and close the lid. Adjust the pressure setting to high and the time to 35 minutes.
- Once the cooking is done, wait for 15 minutes before releasing pressure.
- Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.

Hello, im sorry i don’t get it on step “grind the mixture to a fine paste” how is this “grind” works, should i blender it or just grind it with some tools..? or filter it? maybe?
Just put it in the blender and grind it to a paste.
wasnt the best date cake i ever had. but decent. and i added toffee sauce which made it great.
However, it was extremely moist and fluffy as the recipe promised!
i did use fully all purpose flour.

Thinking about making this cake tomorrow, but wanted to know if you’ve ever attempted adding chopped walnuts to it? Would the Cale still remain moist? Or would the walnuts settle to the bottom of the cake?

Prachika – baking soda helps soften the dates,makes it taste sweeter and also, helps the batter rise. I haven’t made it without baking soda but you could always try and share the results with us.

You mentioned that you can cut it 16 squares . How big are the squares? I wonder if it is enough for 28 kids for a daycare birthday . They don’t give the big portions

Betty, it is a 9-inch square pan. I don’t think it will be sufficient for 28 kids. You’ll need to make 2 cakes.
