Instant Pot Date Cake

If you have kids who want to learn how to cook, you’ll find that Instant Pot cooking is much safer than a stove top. So when my 11-year old wanted to start baking, we thought Instant Pot would be a great place to start.

We love date cake and it needs no frosting just a light sprinkle of powdered sugar, that’s why we chose this recipe.

The key steps to baking a date cake in the Instant Pot include –

  1. Add dates to boiling water
  2. Add baking soda to the mixture
  3. Whip the batter using a blender or stand in mixer.
  4. Pour the batter into a greased bundt cake pan
  5. Cover the bundt pan with foil and use a foil sling to safely place it in the Instant Pot.
  6. Bake it in the Instant Pot for 30 minutes. Wait for 15 minutes before slowly releasing pressure.

Instant Pot Date Cake

Using a Blender and Instant Pot

  • Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil. Add chopped dates to it and let it cook for 5 minutes. Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes.
  • Using a Blendtec blender - Add eggs, butter, vanilla extract and sugar to the blender jar and secure the lid. Select "Batters" and run the cycle twice or blend on a Medium to Medium-Low speed for 60 seconds.
  • Add the date-water mixture and select "Smoothie" or blend on a Medium to Medium-Low speed for 60 seconds
  • Add the remaining ingredients - flour, baking powder, coffee powder, cocoa and salt in the blender and secure lid. Press "Pulse" 3–5 times or until dry ingredients are combined with the wet.
  • Grease a 6-inch bundt cake pan and pour the batter into the greased pan. Cover it with foil. Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet.
  • Place the bundt pan and close the lid. Adjust the pressure setting to high and the time to 30 minutes. Once the cooking is done, wait for 15 minutes before releasing pressure.
  • Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.

Using a stand-in mixer and Instant Pot

  • Press the saute function in the Instant Pot and adjust it to the "More" mode. Add 1.5 cups of water and let it come to a boil. Add chopped dates to it and let it cook for 5 minutes.
  • Add baking soda, mix well and hit warm/cancel. Carefully remove the steel insert and set it aside for 15 minutes. Grind the dates (along with the water it was boiled in) to a fine paste.
  • In a mixing bowl of a stand-in mixer, cream the butter and sugar on medium speed till they are light and fluffy. Add eggs and vanilla to the mixer and continue to beat them till they are combined.
  • Add flour, salt, pureed date mixture, baking powder, coffee and cocoa powder and mix them in till they are well combined.
  • Grease a 6-inch bundt cake pan and pour the batter into the greased pan. Cover it with foil. Add a cup of water in the steel insert of the Instant Pot. Place the trivet. Create a foil sling and place it on the trivet. Place the bundt pan and close the lid.
  • Adjust the pressure setting to high and the time to 30 minutes. Once the cooking is done, wait for 15 minutes before releasing pressure.
  • Carefully remove the bundt pan from the Instant Pot using the foil sling and let the cake cool in the pan before dusting it with powdered sugar.

  1. I used a corning ware oven safe 7″ dish in instant pot for 30 min. and it was very goey in the centre so I had to put it in the oven for 20 min. Do you know if this happens again can you reinsert in the instant pot and continue cooking?? Cake turned out good from the oven. Could of been the pan or it simply takes longer because I did not have a bunt pan. Thanks

    1. Yes, you should be able to reinsert and cook. The material of the pan makes a difference too. I would add 10 more minutes to the cooking time if you are using the Corningware pan and go from there. Did you let the pressure release naturally?

    Revised my opinion. I put it in a 375° oven for 20 minutes. I stuck a toothpick in it. It came out clean. I was expecting a dense cake but it is moist and tender. It tastes good. I gave it the 4 stars because of the instant pot disaster which I was able to recover.

    Followed directions exactly including instant pot setting. It was a disaster. It came out as wet as when it went in. The batter oozed through the center hole in the bundt pan. All around mess.

    1. Ann – could possibly be an Instant Pot issue. If the sealing ring wasn’t snugly fit, it could have caused the cake to not cook. I have tried it in an Instant Pot multiple times and it has always turned out great. I am happy you could salvage the cake in the oven.
